American Apple Cake

This is from a series of handy little books called "The Kitchen Library". The one I have was published by Octopus Books in 1988, but I've seen them in several versions over the years. Here is the recipe, I used Egremont Russett eating apples instead of cooking apples as I had a glut of them from my tree. This makes the texture different to the original. I think I also used Billington's natural demerara sugar which caramelised around the edges. Oh, I probably overdid the cinnamon too as I like spices.

  4oz butter; 12oz caster sugar; 2 beaten eggs; 8oz plain flour; 1 tsp bicarb of soda; 1tbsp ground cinnamon; 1 1/2 tsp ground nutmeg; 1 tsp salt; 1 1/2 lb apples peeled and chopped; 4oz choopped mixed nuts.

4oz butter; 12oz caster sugar; 2 beaten eggs; 8oz plain flour; 1 tsp bicarb of soda; 1tbsp ground cinnamon; 1 1/2 tsp ground nutmeg; 1 tsp salt; 1 1/2 lb apples peeled and chopped; 4oz choopped mixed nuts.

Cream together the butter and sugar then gradually beat in the eggs. Sift the flour, soda, spices and salt together and fold in, then fold in the apples and nuts.

Put into a greased 9" x13" tin and bake in a moderate pre-heated oven at 180C for 1 1/4 hours. Then lower the heat to 150C and cook for a further 45 minutes. Cool and cut into pices to eat.
